True Blue Foodies: 5 Places That Serve Up Dishes Using Butterfly Pea Flower


Eateries going blue – Once rarely used outside of Peranakan cuisine, the butterfly pea flower has gone mainstream, thanks to its Insta-worthy blue tinge. From dim sum to desserts, here’s where you can get your fix of some Avatar-hued delights.

Wildseed Café

This eatery is known for its hearty selection of brunch items and elegant floral bakes. One of these is the elegant Coconut Pea Flower Shortcake (above), made of butterfly pea flower coconut Chantilly and gula melaka-grated coconut, layered with almond dacquoise. Have a slice accompanied by freshly roasted coffee in verdant Seletar Aerospace Park or idyllic Telok Blangah Hill.

Lagoon In A Bowl

Young hawker Zilch Ng thoughtfully prepared sous vide Norwegian salmon, served it on a bed of blue coloured Calrose rice (using butterfly pea flowers, of course) – and Lagoon In A Bowl was born! Final touches to the Norwegian Salmon Rice Bowl include an onsen egg and homemade mentaiko (cod roe) sauce that’s torched for umami smokiness. At just $10 a bowl, this humble one-dish wonder is definitely making waves at Amoy Street Food Centre.

Blue Jasmine

Two Thai classics are given the butterfly pea flower treatment at Blue Jasmine, Park Hotel Farrer Park’s halal Thai restaurant. After dining on your favourite spicy Holy Basil Kaprao and Tom Yum Soup, order Mango & Blue Jasmine Sticky Rice (left) to tame the fires. Then wash it down with the signature Blue Jasmine mocktail that’s a refreshing concoction of yuzu, soda and a house-made butterfly pea flower tea.

Apiary

One of the best-selling flavours at this local artisanal ice cream parlour is Blue Milk. Its name is a geeky reference to the galactic drink in the Star Wars movie franchise. The milk-based confection is first infused with dried butterfly pea flowers overnight to attain its pastel blue shade. Just the right amount of sea salt gives the flavour depth. Insider tip: Pair it with the double chocolate brownie – it puts the ooh la la in à la mode!
